Do you plan out your meals in advance? I envy people who do. Any time I try to set a plan for the entire week, something happens. You know, one of those little things come up, like someone has to work late, or oops, I forgot to get the roast out of the oven in time to thaw, or more often than not, “I just don’t feel like having that!”
There are are whole groups of gluten-free bloggers that commit to posting what they call Meal Plan Monday, and sticking to it. Not being much of a planner, I am not a member of any such group. But I do like reading their posts, for meal ideas.
I actually do plan a couple of days in advance. Most of the time. So in the interest of sharing, just in case it gives someone else a good idea for dinner, here’s what we have going on:
Sunday (yeah, I know, this was last night) we had Boeuf Bourguignon with roasted butternut squash.
Tonight is salad night. We have assorted greens, carrots, hard boiled eggs, a selection of cheeses, leftover salmon, and homemade green goddess dressing.
Tuesday night will be leftover Boeuf with a side of (most likely) sauteed zucchini.
Wednesday, er, um, I don’t know yet…
So there’s my plan for the next couple of days. What’s for dinner at your place?
