Okay, I’m done snarking now, I promise.
What I liked about this one, after I got over the whole “Duh!” response, was that it painted a very positive picture of being gluten-free. I liked how it emphasized buying real, unprocessed foods and preparing your favorite dishes yourself.
Those of us who have been at this for a while, if we think waaaay back to when we first started, a gluten-free diet was a bit of a scary proposition. I already did most of my own cooking, but I can remember feeling a little overwhelmed. And the first time I made pizza, I was pretty scared. “What if it’s horrible?” Well, it wasn’t, it was pretty darn good. And with practice it’s gotten even better.
So to anyone who is newly gluten-free out there, please take a deep breath, relax, and repeat after me:
“It’s going to be okay.”
Really, it is!
