Sometimes I miss Cheez-It crackers. I really enjoyed those crispy, cheesy little squares. Alas, since I am gluten free, there are no actual Cheez-Its in my future. But I did find a recipe that makes me not mind that fact.
I adapted this from a gluteny recipe I found online, and made them to go along with the black bean chili that simmered in the crock pot all day. However, when they came out of the oven, the general consensus (among the two of us) was that though the chili was awesome, these crackers were way too good to be sacrificed in it. So we noshed on these as appetizers and nibbled on them for dessert. Next time I’m definitely making a double batch.
