Gluten-Free Coconut Rice
1 cup water
1 cup canned coconut milk
1 cup Jasmine rice
Salt to taste
Combine the water and coconut milk in a saucepan. Cover and bring to a boil, watching carefully. This boils over easily. When boiling, turn down the heat to low and add the rice. Don’t stir. Put the lid back on the pot and let simmer for 15-18 minutes, or until the rice has absorbed the liquid. Turn off the heat and let the rice continue to steam for a few minutes. Fluff with a fork, add salt if desired, and serve.
See? I told you it was easy. This has a subtle yet distinct coconut flavor that goes well with seafood or chicken. For a really special treat, sprinkle with some freshly toasted shredded coconut.
