OMG! OMG! OMG!
How did it get to be summer already?
(Happy Solstice, everyone!)
I’ve been cooking, but not writing. There have been a few other things on my mind. But I do have a few recipes to share, and I’ll try to get them posted soon.
In honor of summer, and because it’s very warm and humid here, I’ve been concentrating more on salads and side dishes. Something easy, cool, and tasty after a frustrating day at work. The recipe below fits the bill.
I found it at BetterRecipes, and hardly changed a thing. It’s an intensely flavored dish. Your taste buds will be dazzled. I know, some of the ingredients look a little, well… odd. But it works. And it has bacon. Gotta love that…
Gluten-Free Zesty Rice Salad
1/2 cup frozen peas
1 onion, chopped
1/2 cup frozen corn
1 red bell pepper, diced
1/4 cup cooked bacon, diced
1/4 cup gf soy sauce (or Coconut Aminos)
1 Tablespoon mayonnaise or sour cream
1 Tablespoon ground allspice (yes, that’s Tablespoon!)
1 Tablespoon fresh cilantro, chopped
3 cups cooked Jasmine rice, cooled
In a large bowl combine all ingredients, except rice. Add rice and toss to combine.
Note: Definitely use Jasmine rice in this dish. It doesn’t get hard when it’s chilled, and the flavor is out of this world.
