What’s for Dinner?

Crockpot pork roast with butternut squash.

I swear, if my crockpot ever died, I would be at the store buying another, before this one even cooled off. I love it! Toss a pork roast in it, sprinkle liberally with your favorite seasonings (onion powder, garlic powder, and salt here), add a couple of tablespoons of water, and cook on low from just before you leave for work to sometime after you get home from work (or about 9 hours). This also works well with beef (add more water – 1/2 to 1 cup) or chicken. Add veggies to the pot if you like, or cook them separately.

I’m steaming the squash in the microwave tonight. It’s still 87 degrees here, after all, no need to heat up the oven.

Not only is this meal fast and easy, but it’s naturally gluten free. Gotta love that!
