I’m not a morning person. Never have been.
Oh, I do okay in the mornings, but basically I just get by. You’re never going to hear a chipper “Good Morning!” from me before, um, at least eightish or so. And that’s with coffee already in my system. I really prefer to be left alone until at least 9 or 9:30. And as far as eating a healthy breakfast before work?
I do get hungry in the mornings, and I don’t function well when I’m hungry. Ever. So I’ve learned a little trick. My new job starts at 8:30 am sharp, and morning traffic is such that I need to be out of the house by 8:05 to make that 8:30 curfew. I really need to grab something quick and portable. Something that will sustain me until lunch, or at least until my mid or late morning snack (yes, I eat like a Hobbit). So I’ve come up with these muffins. They are ready in about 45 minutes, from the time I think, “Hey, muffins!” to the moment I take them out of the oven. They can be thrown together on Sunday evening, and will sustain both me and David throughout the week. Gotta love that.
Awfully Good Banana Raisin Muffins
The corny name is because these are inspired by Mighty Tasty Muffins by Carol Fenster (found on the back of the Mighty Tasty GF Hot Cereal bag), with some of Dairy-Free Banana Muffins by Rebecca Reilly (found in Gluten-Free Baking), and a lot of my own concoction. And yes, they are awfully good.
