Gluten Free Cornbread

1 cup cornmeal
1 cup gluten free flour mix (any one works)
1 teaspoon xanthan gum
2 tablespoons sugar or honey
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup oil
1 cup milk
1 large egg, well beaten

Preheat oven to 400 degrees.

Oil an 8″ X 8″ pan.

Mix dry ingredients in a medium bowl. Combine wet ingredients in another bowl. Add wet ingredients to dry and gently stir to combine. Do not overmix. Pour batter into 8″ X 8″ pan.

Bake for 25 – 30 minutes, until cornbread browns lightly. Allow to cool slightly, and serve with honey (of course!).

EDIT: If you like your cornbread on the sweeter side, increase the sugar (or honey) to 1/4 cup.
